I use Adobe premiere Pro cs6 and Adobe after effects (for some smaller effects)
The sungrade effect overlay is built in to premiere.

The wheelies when im sitting down is made by clutching the bike up. And when standing up I push the bike down in the front and give full throttle with no clutch on the 2nd gear =)
